How to prepare Moroccan lmsemen
lMsemen is one of Morocco’s most popular traditional pastries, known for its square or round shape, delicious taste, and flaky texture. It is made from a simple dough consisting of flour, water, salt, and butter or oil, then folded multiple times to create a layered, crispy consistency similar to puff pastry.
Msemen is typically served for breakfast or dinner, often accompanied by honey and butter or stuffed with savory fillings such as meat, vegetables, or cheese. It is commonly enjoyed with Moroccan mint tea, making it a beloved dish among locals and visitors alike.
Originating from North African culinary traditions, particularly among Berber and Arab communities, lMsemen has remained a staple in Moroccan cuisine. Today, it continues to be widely enjoyed both at home and in restaurants specializing in traditional Moroccan food
Firstly
* In a bowl(GASSAA), which is a dish made of Moroccan clay, Add white flour, fine semolina, and salt. Mix all ingredients.
* Add water little by little ,Continue mixing until dough is formed,The dough should be slightly sticky , Knead the dough for 7.12 minutes until it becomes smooth and elastic.
*Place the dough in the GASSAA, brush it with a little oil, cover it, then let the dough rest for about 12 minutes.
*Divide the dough into balls weighing between 65 and 75 grams each
*Place the dough balls in a plate, and brush them with vegetable oil
*Cover with a piece of cloth. Leave to rest for 12 minutes.

*Mix fine semolina and sweet yeast in a bowl to use in folding the dough.
*Take a ball of dough and spread it with your hands on the designated place. This process is called (cracking), making the thing flat
*Grease the designated place with oil
*Continue flattening and gently pushing the edges of the dough with your fingers to expand it into a very thin disk of dough. The diameter of the disc should be 30 cm. Keep adding oil to make it easier for the disc to spread.
*Sprinkle a little fine semolina and sweet yeast on the dough.
*Fold the top edge towards the middle and the bottom edge towards the middle to form a long rectangle of dough.
*Fold the right and left edges of the dough toward the center to form a small square
Finally we will cooK
*Lubricate the flattening area with oil. Take one piece of dough and spread it with your fingers until you get a thin square three times larger
*Heat the pan over heat. Spray a little oil on it. Reduce the heat to medium
*Cook the Lmesmen on both sides
*Stir the mousse and make sure the edges are cooked and golden
*Take the Lmesmen out of the frying pan and place it on a wooden surface so that it does not sweat
